2. Healthy Kerala Beetroot pachadi recipe

Beetroot is very good for your health and helps purify your blood Ingredients: 1 beetroot – peeled, washed and chopped 1 pinch cumin, 2 tbsp grated coconut, 2 chopped green chilies, 1 tsp jaggery, half cup plain yoghurt a mixture of mustard, dried red chilies, curry leaves, 1 tsp crushed mustard, virgin coconut oil, salt to taste, and water Cook the beetroot in a pressure cooker until 1-2 whistles The beetroot is cooked well While it cools, grind the 2 tbsp grated coconut, chopped green chilies and cumin with 2 tbsp water Add the crushed mustard seeds to this mixture

Mix well Grind the beetroot pieces using a quarter cup of water Now add the beetroot paste to a pan and cook on medium heat Add half a tsp salt Add the powdered jaggery to this Add the paste containing coconut, green chilies and cumin, to the beetroot paste Mix well Cook on low flame now, and add the half cup of plain yoghurt Now you can turn off the flame Don't cook for too long after adding yoghurt Keep mixing well For the garnish, fry mustard, dried red chilies, curry leaves in a teaspoon of virgin coconut oil Once it splutters, add this to the beetroot pachadi This is a very tasty dish
